A friend of mine recommended that I watch a documentary called The Beautiful Truth. It is about a teenager named Garrett Kroschel who reads a book by Dr. Max Gerson and is inspired to seek out more information about Dr. Gerson’s dietary therapy which can cure cancer and other types of diseases. In Dr. Gerson’s research, he finds that he is able to cure cancer with a primarily vegan diet along with other dietary restrictions. In the film, Garrett takes this knowledge and travels across the country to learn about Gerson’s therapy and its claim in the medical industry. I found the movie interesting. However, I don’t think I want to quite restrict my diet to Dr. Gerson’s instruction. While I do not have cancer, the film alludes to the fact that this diet can prevent cancer and other diseases. One of the topics in the film that is discussed is the benefits of juicing. My friend was advocating the health benefits of juicing as well so I decided to give it a go. Unfortunately, I don’t own a juicer so I had to seek an alternative to juicing instead. The result was combing fruits and vegetables with a blender, some cheesecloth, and a wooden spoon. The result is a delicious and nutritious drink.
Below are two recipes that you can try for juicing.
Spinach, Celery, & Apple Juice
Ingrediants & Supplies:
1 Cup of Spinach
2 Stocks of Celery, diced
1 Apple, diced*
1/2 Cup Water**
Blender
Medium Bowl
Cheesecloth
Wooden Spoon
Cup for Serving
Directions:
Place in blender water, spinach, celery, and apple. Blend until liquified. The resulting liquid will be somewhat frothy (in a sense like a smoothie).
Over a medium bowl, cover the bowl with the cheesecloth.** Pour the contents from the blender into the cheesecloth (careful not to let the thick pulp into the bowl) and use a wooden spoon to help drain the liquid from the pulp.
After you are done with draining the liquid, discard the pulp. You can either save the cheesecloth and wash it under cold water until the cheesecloth is clean for reuse or you can throw away. Take the remaining liquid from the bowl and transfer to a cup for serving.Enjoy!

1 Apple, diced*
1/2 Cup of Water **

Over a medium bowl, cover the bowl with the cheesecloth.*** Pour the contents from the blender into the cheesecloth (careful not to let the thick pulp into the bowl) and use a wooden spoon to help drain the liquid from the pulp.

Cook’s Notes:
*Apple juice can be substituted for the apple. However, I recommend you use pure apple juice.
** If you are having a difficult time getting your mixture from the blender to chop the vegetables, use more water. Don’t use too much water, however, because it will dilute your juice.
***I recommend when you are covering the bowl to attach the cheesecloth to the bowl so you won’t drop the cheesecloth into the liquid. If you have a large rubber band you can put the rubber band around the bowl or clip the cheesecloth with a potato chip clip or bobby pin.
